Almond Cakes with Strawberry Jam

French style cakes, traditionally made with raspberry jam. We use strawberry jam in this recipe, however, you can use raspberry jam if available to make red and white stripes.

In a bowl, combine the sifted dry ingredients and egg whites. Blend well. (Photo #1)

Pour in melted butter and blend well until smooth. (Photo #2)

Fill a baking tray with the batter to a depth of 5mm.

Bake in a preheated oven at 160 °C (320 °F) for 20 minutes until brown.

After cooling, cut the cake into four 5cm strips. (Photo #3)

Thinly spread jam on one of the strips, then place another on top. Repeat this process twice.

Cut into bite size pieces and sprinkle with confectioners’ sugar.
