Finely chop orange peel. Crush almonds lightly between your hands. (Photo #1)

Combine butter, sugar and honey in a saucepan. Place the saucepan over heat.

When the mixture comes to a boil, stir in cream a little at a time. (Photo #2)

Keep stirring and heat until the mixture browns lightly. (Photo #3)

Remove from the heat, then mix in almonds, orange peel and flour, in that order. Blend well. (Photo #4)

Line the bottom of a pan with baking paper. Spread the mixture into the pan to a depth of 5mm – 1cm and smooth the top. (Photo #5)

Bake in a preheated oven at 180 °C (365 °F) for 12 - 15 minutes until brown. The Florentine will be soft when it has just been baked. (Photo #6)

Allow to cool in the pan.

While it is still soft enough to cut, cut into 3cm×5cm rectangles. (Photo #7)

Place the Florentines on cooking paper to remove excess grease and allow to cool until hard.
