Swiss style baked apples, sandwiched in “streusel” crumb dough. Press the dough through a sturdy strainer or sieve to make it crumbly. Use a small apple with a tart flavor such as Jonathan (Kougyoku).

In a bowl, cream together butter and sugar.

Add beaten egg yolk and blend well.

Fold in sifted dry ingredients and blend. Press the dough together to form a clump.

Press the dough through a strainer or sieve to make it crumbly. (Photo #1)

Using 2/3 of the crumb dough, fill a baking pan to a depth of 2cm. Then compress the dough with the palm of your hand into about 1cm thick. (Photo #2)

Bake in a preheated oven at 180 °C (356 °F) for about 5 minutes. Do not brown the dough at this point.

Slice apples into 1cm wedges.

Place the apples on top of the baked dough and sprinkle with sugar*. Then sprinkle with the remaining dough on top. (Photo #3)

Bake in a preheated oven at 180 °C (356 °F) for about 10 - 15 minutes until golden. (Photo #4)
